This Easy Oatmeal Crepe Is the Perfect Quick Breakfast
Baking oats in a skillet with an egg creates a soft wrap that tastes amazing with cream cheese and fresh tomatoes.
If you are tired of boring morning porridge, this simple oat crepe is the perfect solution. It takes just a few minutes to cook and makes a filling, healthy breakfast you can easily take to work.
Here’s what you need: 3 tablespoons of rolled oats, 1 large egg, 2 tablespoons of milk, a dollop of cream cheese, a few slices of fresh tomato, and a handful of finely chopped fresh dill.
Whisk the rolled oats, egg, and milk together in a small bowl until the mixture is completely uniform.
Heat a non-stick skillet over medium heat and pour the oat batter right into the center, spreading it out into a thin, even circle with the back of a spoon. Cook for about 2 minutes, flip carefully with a spatula, and let the other side brown for another 2 minutes until fully set.
Slide the hot crepe onto a plate and spread a generous layer of cream cheese over the top. Scatter the chopped dill and fresh tomato slices evenly over one half, fold it in half or roll it up tightly, and enjoy it immediately or pack it up for later.
