Turn Pennies Into Gold: The Secret to This Elegant, Melt-in-Your-Mouth French Onion Pie

A perfect option if you aren’t willing to spend much time on cooking the onion soup.

It’s no secret that the French cuisine has become famous across the world thanks to the onion soup in particular, prompting many people in different countries to try and make it themselves in their own kitchens. However, the cooking process isn’t that easy as it might seem at first, so we’re more likely to opt for a restaurant version.

Well, the French onion pie is a different story — made of the simplest ingredients, it will turn out perfect even if you’re not good friends with the oven.

Here’s what you need: 200 g of flour, 100 g of butter, a pinch of salt, 1 egg, 1–2 tablespoons of milk.

For the filling: 25 g of butter, 2 tablespoons of olive oil, 900 g of onions, 2 eggs, 300 ml of heavy cream, 40 g of grated Parmesan, salt, spices.

Mix the flour with salt and cold butter, quickly rub into crumbs, then add the egg and a little milk, knead the dough, and put it in the fridge for 30 minutes.

Then roll out the dough, place it in a pan, forming sides, and lightly pre-bake the crust in the oven at 190°C for about 15 minutes.

Thinly slice the onion and cook it in a mixture of butter and olive oil over low heat for about 30 minutes until soft and slightly sweet. Separately, whisk the eggs with the cream, then add the cheese and spices. Spread the onions over the crust, pour the cream mixture on top, and bake for another 25–30 minutes until golden brown.

Let the pie cool slightly before serving; this will make it even more delicious.
