Ingredients (for 2 sandwiches): 2 slices of toast, 2–3 slices of cheese, 2–4 strips of bacon, 2 eggs, 1 avocado, 2 tbsp (30 g) of sweet chili sauce, 1 tbsp (15 ml) of lemon juice, ½ of a small red onion (50 g), 40 g of fried onions (ready-made), 30 g of Parmesan, salt and pepper to taste.
Toast the bread until golden brown so it’s crispy and doesn’t get soggy. Place slices of cheese on top so they melt slightly from the heat. Fry the bacon separately until golden and crispy; then cook the eggs so the yolks remain soft. For the sauce, mash the avocado, add sweet chili, lemon juice, and finely chopped red onion; it will be creamy, with a mild spiciness and freshness.
Next, assemble the sandwiches: place the bacon on the bread with cheese, top with the sauce, carefully arrange the fried eggs, sprinkle with crispy fried onions, and finish with grated Parmesan.
