White Chocolate & Frozen Berry Hack: How to Make Bakery-Style Cookies in 30 Minutes

The secret to one of the most delicious versions is white chocolate and berries that will give the cookies mix of sweetness and sourness.

Ingredients: 280 g of wheat flour, ½ tsp of baking soda, ½ tsp of salt, 170 g of softened butter, 150 g of sugar, 50 g of brown sugar, 1 egg, 1 tbsp of lemon zest, 1 tbsp of lemon juice, 1 tsp of vanilla extract, 120 g of any frozen berries, 1 tbsp of cornstarch, 130 g of white chocolate.
Defrost the berries beforehand, gently drain off any excess juice, and lightly coat them in cornstarch; this prevents them from releasing excess moisture and helps them hold their shape nicely in the dough.
Whisk the soft butter with two types of sugar until fluffy, then add the egg, zest, juice, and vanilla. Separately, mix the flour, baking soda, and salt, then combine with the wet ingredients. Fold in the chopped white chocolate and prepared berries.
Spoon the dough onto a baking sheet lined with parchment paper and bake at 180°C for about 10–12 minutes until lightly golden around the edges — the cookies remain soft and very tender on the inside.
