7-Minute Quick-Pickled Korean Tomatoes: The Ultimate Spicy, Fresh Side Dish for Meat and Potatoes
The snack your guests will never forget.
When it comes to choosing what type of side dish to make for a weekend barbecue, we usually think that making a really flavorful, savory appetizer will take ages or require a basement full of jars.
However, this quick Asian-style recipe can radically change your cooking routine and make it better and easier — especially since these spicy tomatoes can be put together within minutes.
Just chop your veggies, mix them with a simple garlic dressing, and let the fridge do the work — the dish turns out so punchy and fresh that it will easily become your family's new favorite guest at the table.
Ingredients: 1 kg of tomatoes, 10 g of seasoning for Korean-style carrots, 8 g of salt, 15 g of sugar, 2 g of ground coriander, 4 cloves of garlic, 80 ml of vegetable oil, 20 ml of apple cider vinegar, 30 ml of soy sauce, 20 g of parsley, 15 g of basil, 10 g of hot pepper.
Cut the tomatoes in half or into quarters and place them in a large bowl. Add the vegetable oil, apple cider vinegar, soy sauce, salt, sugar, Korean carrot seasoning, and ground coriander.
Press the garlic, finely chop the herbs, mince the hot pepper, and add them to the tomatoes. Gently toss to coat each piece with the flavorful dressing.
Transfer the appetizer to a container or jar with a lid and refrigerate. In just 2–3 hours, the tomatoes will be fully infused with the marinade and ready to serve.
