If you’re looking for a dessert that feels incredibly light, elegant, and looks like it walked straight out of a high-end bakery, a classic Angel Food Cake is what you’ve needed all along.

Unlike heavy, butter-laden cakes, this treat relies entirely on whipped egg whites to create a texture so fluffy and cloud-like it practically melts in your mouth. It’s the perfect, guilt-free canvas for fresh summer berries, a dollop of whipped cream, or a drizzle of tart fruit coulis.

Ingredients: 10 egg whites, 3/4 tsp of cream of tartar (or citric acid), 1/4 tsp of salt, 1 tsp of vanilla extract, 1/4 cup of sifted powdered sugar, 1 cup of cake flour, zest of 1/2 of a lemon.

Preheat the oven to 175°C.

Beat the egg whites with cream of tartar and salt until stiff peaks form (like meringue) while gradually adding the powdered sugar. Add the vanilla extract. Sift the flour, mix it with the lemon zest, and gently fold it into the egg whites in three additions.

Pour into a 25 cm (10") pan, smooth the surface, and bake for 30–45 minutes, testing for doneness with a toothpick. Any non-stick pan will work, as long as it has a cylindrical indentation in the center (like a muffin pan). This is necessary to ensure the cake bakes evenly from the inside.

Let the finished cake cool by turning the pan upside down (so it doesn’t collapse as it cools). Dust with powdered sugar.

Traditionally, it is served with light creams or berry sauces.
