Better Than a Cupcake, Softer Than a Cookie: The Secret to the Perfect American Whoopie Pie
Just half an hour of cooking, and the best chocolate dessert filled with tender cream is ready to be served at any party or dinner.
While some dishes from across the world remain on top of the list of the most popular meals, others can go into hiding to eventually reemerge and become viral again. This might be the case of the famous American whoopie pie the recipe for which dates all the way back to the 1830s, with the dessert itself having become a global phenomenon in recent years.
There’s plenty of different versions that offer all kinds of tastes, but nothing beats the classic chocolate whoopie pie filled with cream cheese.
Ingredients (for 20 portions): 110 g of sugar, 1 egg, 90 g of fermented milk, 50 g of sour cream, 50 g of butter, 150 g of flour, 30 g of cocoa, 1 g of salt, 1 g of baking soda, 10 g of vanilla sugar, 70 g of butter, 50 g of powdered sugar, 50 g of sour cream, 100 g of cream cheese, 100 g of heavy cream (30% fat).
Combine the dry ingredients: flour, cocoa powder, baking soda, and salt.
Beat the egg with granulated sugar and vanilla sugar until fluffy, then, while continuing to beat, gradually add the melted butter.
Add the sour cream and fermented milk, then the dry ingredients.
Using about a tablespoon of dough, form small balls and place them on a baking sheet lined with parchment paper, 7–8 cm apart. Bake for 14 minutes at 180°C.
For the cream, beat room-temperature butter with powdered sugar until pale and fluffy. Add the remaining ingredients and beat again until light and fluffy.
Pipe the cream onto the cooled sponge cakes using a pastry bag and assemble them like sandwiches.
