Packed with rich cream cheese, crisp greens, and delicate salted fish, this foolproof, elegant appetizer comes together in minutes without making a mess.

Let’s be real: nobody has time to spend hours building tiny, fussy appetizers when hosting people. Instead, you can just layer some smooth cream cheese, crisp lettuce, and rich cured trout onto a piece of flatbread and roll it right up. It takes practically zero effort, but once you slice it into neat little pinwheels, it looks incredibly fancy on a platter.

Ingredients: 1 large sheet of thin flatbread (lavash), 7 oz (200g) of thinly sliced lightly salted trout (or salmon), 1 bunch of fresh leaf lettuce, and 1 container (180g) of plain cream cheese.

To start assembling, carefully unfurl your sheet of flatbread across a clean countertop or large cutting board. Grab a spatula or a butter knife and spread the cream cheese evenly from edge to edge, creating a smooth, velvety foundation.

Wash your lettuce leaves thoroughly and pat them completely dry with a paper towel. Lay the crisp green sheets across the cream cheese layer in a single, neat row.

Next, thinly slice your cured trout into bite-sized strips and arrange them evenly over the bed of greens. If you want to add a nice, subtle crunch and a touch of visual flair, now is the time to scatter a pinch of sesame seeds over the filling.

Starting from the long edge closest to you, tuck the flatbread inward and roll it away from you into a tight, compact cylinder. Wrap the entire log securely in plastic wrap to hold its shape, and pop it into the fridge for at least 30 to 40 minutes to let the layers firm up and stabilize.

Once the roll is nicely chilled, place it on a steady board. Use a very sharp chef's knife to cleanly slice the cylinder into elegant, bite-sized pinwheels about 1 inch (2–3cm) thick. Arrange them beautifully on your serving platter and serve immediately while cold.
