As Gordon Ramsay’s daughter Tilly has recently revealed in one of her videos on TikTok, one simple ingredient she adds to her muffins always works and gives them extra fluffiness.
What Is Tilly Ramsay’s Recipe for Fluffy Muffins?
In the same video posted by Tilly on TikTok, she reassures that everyone will succeed in making muffins no matter what and also reveals she always adds Greek yogurt to make the muffins’ texture smoother. In fact, the same ingredient goes quite well with many other similar dishes — take fluffy blueberry pancakes as an example.
As for Tilly Ramsey’s blueberry muffins, here’s what you need to make them at home: 115 g of Greek yogurt, 2 eggs, 85 g of melted butter, 75 ml of milk, 100 g of light brown sugar, 100 g of powdered sugar, 175 g of blueberries, 200 g premium wheat flour, 0.5 teaspoon baking powder, a pinch of salt.
For the crumble topping: 120 g of rolled oats, 45 g of powdered sugar, 100 g of melted butter, a pinch of ground cinnamon.
Preheat the oven to 180°C. Add the eggs, Greek yogurt, melted butter, milk, white and brown sugar to a bowl. Beat on low speed until smooth.
Sift the flour, salt, and baking powder. Continue mixing thoroughly until all ingredients are combined, then gently fold in the blueberries. Divide the batter among the muffin cups.
Mix all the ingredients for the crumble topping. Sprinkle the crumble topping over the batter in each muffin cup. Bake in the oven for 20-25 minutes.
