Hearty Scandinavian Potato and Egg Salad: The Simple Family Side Dish Made from Everyday Ingredients

This Scandinavian classic offers a beautifully fresh and harmonious alternative: just chop your boiled potatoes and eggs, combine them with crisp cucumbers and quick-marinated red onions, and toss everything together.
The dish turns out so tender and rich in taste that it might become your own favorite for both celebrations and simple dinners.
Ingredients: 250–300 g of lightly salted herring fillets, 4 eggs, 3–4 potatoes, 2–3 pickled or salted cucumbers, 2 onions, 1–2 tablespoons of canned corn, 1–2 tablespoons of canned green peas, 3 tablespoons of vegetable oil, 1 teaspoon of 9% vinegar, a pinch of salt, a pinch of sugar, 200 ml of mayonnaise, 1 teaspoon of mustard, 1 hard-boiled egg yolk.
Boil the potatoes in their skins until tender, let them cool completely, and cut them into small cubes.
Hard-boil the eggs, let them cool, and cut them into large pieces.
Set aside one yolk for the sauce.
Cut the herring fillets into small pieces.
Peel the onion and cut it into cubes or thin half-rings. Mix the vegetable oil, vinegar, salt, and sugar. Pour this mixture over the onion and let it marinate for 15–20 minutes.
Dice the pickled or salted cucumbers.
Open the canned corn and green peas; drain the liquid if necessary.
For the dressing, combine the mayonnaise, mustard, and hard-boiled egg yolk. Mix until smooth.
Put the potatoes, eggs, herring, cucumbers, marinated onions, corn, and peas into a salad bowl. Add the dressing and gently toss to combine.
Place the salad in the fridge for 30–60 minutes to allow the flavors to meld.
Serve chilled.
