The 30-Minute "Milk Girl" Cake: My Favorite Lazy-Style Recipe for the Softest Dessert Ever

Everyone living in between work and home routine knows how hard it can be to motivate themselves to cook something delicious and not very complicated. Luckily, the social media is full of “lazy” recipes that can become a perfect option for a dessert time after dinner.

One of those is this “milk girl” cake that won’t take more than half an hour to be prepared. Made of the simplest ingredients, this dessert will feel like heaven from the best bakery you’ve ever visited.

Here’s what you need: 1 can (380 g) of condensed milk, 2 eggs, 160 g of flour, 10 g of baking powder, 500 ml of 33% heavy cream, 4 tbsp of powdered sugar (2 tbsp for the cream, 2 tbsp for the glaze), 1.5–2 tsp of boiling water.

Start by pouring a can of condensed milk into a deep bowl, cracking two eggs into it, and mixing well with a mixer or whisk. Then measure out 160 grams of flour and add 10 grams of baking powder; mix them together and add this mixture to the batter. Stir until smooth.

For convenience, divide the dough into two parts. Take a baking sheet (for instance, 38×32 cm), line it with parchment paper, and spread half of the dough evenly. Don’t worry if the layer is thin, it will rise during baking. Place in a preheated oven at 200°C and bake for 7–8 minutes until done. Place the finished cake layer on a towel and remove the parchment paper.

Repeat the same process with the other half of the dough. When both cake layers are ready, cut each into 3 pieces (or 2, whichever you prefer). In the end, you will have 6 cake layers.

Make the frosting: pour 500 ml of chilled heavy cream into a bowl, add 2 tbsp of powdered sugar, and whip until stiff peaks form. The key is not to overbeat it, otherwise the cream will turn into butter.

Assemble the cake: place the first cake layer, spread cream on it (about 3 tbsp per layer), and repeat for all layers, the top, and the sides. For decoration, sprinkle the cake with cake scraps that have been crushed in a blender.

For the glaze, mix 2 tbsp of powdered sugar with 2 tsp of freshly boiled water and pour it over the top of the cake. Let the cake soak—it’s ready for serving in an hour, but you can leave it in the fridge overnight for an even better flavor.
