The Best Way to Use Yesterday’s Rice: How to Make Authentic Japanese Chahan (Yakimeshi) at Home

We’re all used to thinking that normal rice can go perfectly well with whatever type of meat and fish or vegetables. However, having rice for lunch or dinner again and again can become something pretty annoying, so a need for finding a new way to cook it might come along.
This recipe for Japanese-style rice is a perfect solution — just add eggs, veggies and soy sauce to turn it into the most authentic dinner ever.
Here’s what you need: 400–500 g of boiled rice, 1–2 eggs, 1 carrot, 1–2 bell peppers, 1/2 of an onion, 300 g of chicken, 3–4 tbsp of soy sauce, vegetable oil, green onions, salt, pepper.
First, quickly fry the onions and carrots in a well-heated skillet, then add the bell peppers and chicken pieces. Cook everything over high heat, stirring constantly.
Pour in the egg and immediately spread it across the pan, then add the rice and soy sauce. Stir for a few more minutes so the rice heats through and absorbs the flavors.
Sprinkle with green onions before serving.
