If you are tired of basic grilled beef and want something that packs a real punch, Carne Asada is the ultimate upgrade. The real secret to this legendary Mexican dish isn't a high-end price tag on the meat; it’s all about a high-impact marinade.

Freshly squeezed lime and orange juices work fast to tenderize the beef fibers, while spicy peppers and aromatic seasonings inject massive flavor deep into the steak.

All it takes is a quick flash-sear over high heat, and you get incredibly juicy, tender meat with a smoky charred crust that is perfect on its own or loaded into street tacos.

Ingredients: 1 bunch of cilantro, 4 cloves of garlic, 1 jalapeño or other hot pepper, 80 ml of olive oil, 60 ml of soy sauce, 60 ml of freshly squeezed orange juice, 2 tablespoons of freshly squeezed lime juice, 2 tablespoons of white wine or apple cider vinegar, 1 teaspoon of ground cumin, 1 teaspoon of ground oregano, 1 teaspoon of coarse salt, 2 teaspoons of ground chili, ½ teaspoon of ground black pepper, 900 g of beef steak.

Chop the cilantro, garlic, and seeded chili pepper.

Combine the prepared ingredients with the oil, soy sauce, juices, vinegar, cumin, oregano, salt, ground chili, and black pepper.

Set aside 50 ml of the marinade, then pour the rest over the steak, spreading it evenly over the surface.

Place the meat in the fridge for 3-4 hours. Take it out and bring it to room temperature. Shake off any excess marinade and pat dry with paper towels.

Heat a heavy-bottomed skillet or grill pan over high heat and lightly grease with oil. Sear the steaks for about 4–6 minutes on each side, basting occasionally with the reserved marinade.
