The so-called snack culture varies from one country to another, but some appetizers gain so much fame they eventually turn into a phenomenon in a very different culture. One of the best examples is probably the American devil eggs, which are actually just boiled eggs cut in two and filled with spicy sauce.
Despite its simplicity, the snack conquers the hearts every time it appears at someone’s party, so don’t miss an opportunity to serve them next time you hang out with friends.
Ingredients: 6 large eggs, 3-4 tablespoons of mayonnaise (use high-quality, thick mayonnaise), 1 teaspoon of Dijon mustard, 1/2 teaspoon of white wine vinegar (or apple cider vinegar), 1/4 teaspoon of salt (or to taste), freshly ground black pepper to taste, smoked paprika for garnish.
Hard-boil the eggs. Cool them in ice water, then carefully peel them.
Cut them open and remove the yolks: use a sharp knife to cut each egg in half lengthwise. Carefully remove the yolks with a spoon or your fingers and place them in a separate bowl. Set the eggs aside on a plate or cutting board.
Use a fork to thoroughly mash the yolks into crumbs. It’s important to achieve maximum smoothness so there are no lumps in the filling. Add mayonnaise, Dijon mustard, and vinegar to the mashed yolks. Start with 3 tablespoons of mayonnaise; you can add more if you need to.
Thoroughly mix all the ingredients with a fork or whisk until you get a smooth, creamy paste. The consistency should resemble thick cream. If the filling seems too dry, add a little more mayonnaise.
Season the filling with salt and pepper to taste. Make sure to taste it! The flavor should be balanced - creamy, with a slight spiciness and sourness.
You can simply fill the egg white halves using a teaspoon. However, if you want to make an impression, use a pastry bag with a decorative tip (for example, a “star” tip).
Before serving, generously sprinkle each egg with smoked paprika. It will not only give it a beautiful color but also a subtle smoky aroma.
